Albanian Roasted Red Pepper and Garlic Dip (Hummus i Kuq)

This traditional Albanian roasted red pepper and garlic dip, known as Hummus i Kuq, is a vibrant and flavorful alternative to the classic hummus. Infused with roasted red peppers and the piquant zing of garlic, this dip is perfect as part of a mezze platter or as a stand-alone appetizer.

Ingredients
  

  • 3 large red bell peppers (approximately 1.5 lbs or 680g)
  • 4 cloves garlic unpeeled
  • 1 can chickpeas (15 oz or 425g), drained and rinsed
  • 2 tbsp extra virgin olive oil plus extra for drizzling
  • 1 lemon juice of (about 2 tablespoons or 30ml)
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp smoked paprika
  • 1 tbsp tahini (sesame paste)
  • Fresh parsley, chopped for garnish (optional)

Instructions
 

  • Preheat your oven to 450°F (232°C). Line a baking sheet with aluminum foil for easy clean-up.
  • Place the red peppers and garlic cloves on the prepared baking sheet and roast in the oven for about 20 minutes, or until the peppers are charred and blistered on the outside.
  • Once done, remove from the oven and place the peppers in a bowl, covering them with plastic wrap to steam for 10 minutes. This process will make peeling the peppers easier.
  • Peel the roasted peppers, discard the seeds and stems, and place the flesh into a food processor. Squeeze the roasted garlic out of their skins and add to the food processor.
  • Add chickpeas, olive oil, lemon juice, salt, black pepper, smoked paprika, and tahini to the food processor with the peppers and garlic.
  • Process the mixture until smooth and creamy, scraping down the sides as necessary. If the dip is too thick, you can add a little water to reach your desired consistency.
  • Taste and adjust seasoning if needed, then transfer to a serving bowl.
  • Drizzle with additional olive oil and sprinkle with smoked paprika and chopped parsley for garnish before serving.

Notes

For an authentic Albanian experience, serve this dip with warm, crusty bread or pita. It can also be enjoyed with a variety of raw vegetables for a healthier option. This dip is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
