Ingredients
  

  • 4 large ripe tomatoes about 2 lbs / 900g, diced
  • 2 medium green bell peppers about 1 lb / 450g, diced
  • 1 medium red onion about 1/4 lb / 110g, finely chopped
  • 1/4 cup fresh parsley about 15g, chopped
  • 2 tbsp fresh mint about 5g, chopped
  • 3 tbsp extra virgin olive oil 45ml
  • 2 tbsp fresh lemon juice 30ml
  • 1 tsp salt 5g
  • 1/2 tsp black pepper 2.5g
  • 1/2 tsp cayenne pepper optional, 2.5g, for a spicy kick

Instructions
 

  • Begin by thoroughly washing the tomatoes and bell peppers. Pat them dry before dicing into small, bite-sized pieces.
  • Peel and finely chop the red onion. The smaller the pieces, the more they'll meld with the salad's flavors.
  • In a large mixing bowl, combine the diced tomatoes, bell peppers, and red onion.
  • Chop the parsley and mint, ensuring they're fresh and vibrant to add a burst of flavor to the salad.
  • Add the chopped herbs to the mixing bowl with the vegetables.
  • In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice until well combined. This will be your dressing.
  • Season the dressing with salt, black pepper, and optional cayenne pepper for a little heat if desired.
  • Pour the dressing over the vegetables and herbs, tossing gently to ensure everything is evenly coated.
  • Taste and adjust the seasoning if necessary. The salad should have a pleasing balance of zesty and savory notes.
  • Let the salad sit for about 5 minutes to allow the flavors to mingle before serving.
