Ingredients
  

  • 1 lb chicken breast, cut into 1-inch cubes
  • 1/4 tsp saffron threads
  • 2 tbsp warm water
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 lemon, zest of
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper, freshly ground
  • 1 tbsp fresh parsley, finely chopped
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch pieces
  • Wooden or metal skewers

Instructions
 

  • Begin by soaking the saffron threads in warm water for 10 minutes, allowing their color and flavor to release.
  • In a large mixing bowl, whisk together the infused saffron water, olive oil, lemon juice, lemon zest, minced garlic, smoked paprika, cumin, sea salt, and black pepper to create the marinade.
  • Add the chicken cubes to the marinade and toss until well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more pronounced flavors.
  • If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken cubes onto the skewers, alternating with pieces of red and yellow bell pepper and red onion.
  • Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and has a nice char.
  • Garnish the skewers with fresh parsley before serving.
