Ingredients
  

  • 1 can chickpeas 15 oz or 425 g, drained and rinsed
  • 2 ripe avocados
  • 4 slices whole-grain bread
  • 1 tablespoon olive oil 15 ml
  • 1/2 teaspoon sumac plus extra for garnish, 1 g
  • 1 small red onion thinly sliced
  • 1 lemon juice of
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish
  • 1 clove garlic minced
  • 1 tablespoon tahini optional, 15 ml

Instructions
 

  • Begin by toasting the whole-grain bread to your preferred level of crispness.
  • In a medium-sized bowl, mash the avocados with the lemon juice, minced garlic, tahini (if using), and season with salt and pepper.
  • In a separate bowl, combine the chickpeas, olive oil, sumac, and a pinch of salt. Mix well until the chickpeas are evenly coated with the spices.
  • Spread the mashed avocado mixture onto the toasted bread slices.
  • Top each slice with a generous portion of the seasoned chickpeas.
  • Garnish with thinly sliced red onion, additional sumac, and fresh parsley.
  • Serve immediately and enjoy the fusion of flavors.

Notes

For gluten-free requirements, use gluten-free bread.
Adjust the amount of sumac to suit your taste preference; it can be quite tangy.
The tahini adds a creamy sesame flavor but can be omitted if not available.
