Ingredients
  

  • 1 tbsp olive oil
  • 1/2 medium onion, diced about 1/2 cup or 75 g
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced about 1 cup or 150 g
  • 1 cup shredded cooked chicken approximately 150 g
  • 1/4 cup Buffalo sauce
  • 1 can crushed tomatoes 14 oz or 400 g
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 4 large eggs
  • 1/2 cup blue cheese crumbles about 50 g
  • 2 stalks celery, finely sliced
  • Fresh parsley for garnish

Instructions
 

  • Preheat the Skillet: In a large skillet, heat the olive oil over medium heat.
  • Sauté the Aromatics: Add the diced onion and cook until translucent, about 3 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the Bell Pepper: Incorporate the diced red bell pepper and sauté for another 5 minutes until softened.
  • Combine Chicken and Buffalo Sauce: Toss the shredded cooked chicken with the Buffalo sauce in a bowl, then add to the skillet, stirring to combine with the vegetables.
  • Create the Shakshuka Base: Pour in the crushed tomatoes and season with smoked paprika, cumin, salt, and pepper. Stir well and let the sauce simmer for about 10 minutes until it thickens slightly.
  • Poach the Eggs: Make four wells in the sauce with a spoon and crack an egg into each well. Cover the skillet with a lid and cook until the eggs are done to your liking, approximately 7-10 minutes for soft yolks.
  • Add the Finishing Touches: Sprinkle blue cheese crumbles over the Shakshuka. Scatter the finely sliced celery on top for a fresh crunch.
  • Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve hot.

Notes

For a vegetarian version, omit the chicken and add chickpeas or extra veggies. Adjust the heat level by using more or less Buffalo sauce according to your preference. Feel free to substitute blue cheese with feta or goat cheese for a milder flavor profile.
