  • 4 large heirloom tomatoes cut into wedges (about 2 lbs / 900g)
  • 3 ripe nectarines sliced (about 1 lb / 450g)
  • 1/4 red onion thinly sliced (about 1.5 oz / 40g)
  • 1/4 cup fresh basil leaves torn (0.2 oz / 5g)
  • 3 tablespoons extra virgin olive oil (45ml)
  • 1 tablespoon red wine vinegar (15ml)
  • 1/2 teaspoon flaky sea salt (2.5g)
  • 1/4 teaspoon freshly ground black pepper (1g)
  • 1/3 cup crumbled feta cheese optional (about 1.5 oz / 40g)

Instructions
 

  • Begin by preparing the ingredients. Wash the heirloom tomatoes and nectarines thoroughly. Cut the tomatoes into wedges and slice the nectarines, discarding the pits.
  • Thinly slice the red onion for a mild flavor that complements the sweetness of the fruit.
  • In a large mixing bowl, gently toss the tomato wedges, nectarine slices, and red onion.
  • Drizzle the extra virgin olive oil and red wine vinegar over the salad. Add the flaky sea salt and freshly ground black pepper.
  • Toss everything gently to ensure the fruits and onion are well-coated with the dressing.
  • Tear the fresh basil leaves with your hands and sprinkle them over the salad to distribute their aroma and flavor.
  • If using feta cheese, crumble it over the top of the salad for an added creamy texture and tangy taste.
  • Give the salad one final, gentle toss to combine all the ingredients.
  • Serve immediately, or let it sit for about 10 minutes to allow the flavors to meld together before serving.

Notes

Choose the ripest nectarines and heirloom tomatoes for the best flavor.
Heirloom tomatoes are preferred for their variety and robust taste, but if unavailable, any ripe tomatoes will suffice.
The feta cheese is optional but recommended for an authentic Mediterranean touch.
