Ingredients
  

  • 1 sheet puff pastry, thawed (about 8 ounces or 225 grams)
  • 6 fresh figs, sliced (about 9 ounces or 255 grams)
  • 4 ounces goat cheese, crumbled (113 grams)
  • 2 tablespoons honey plus extra for drizzling
  • 1 tablespoon fresh thyme leaves
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 egg, beaten for egg wash

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the puff pastry on a floured surface to a rectangle about 10x14 inches (25x35 cm). Transfer the pastry to the prepared baking sheet.
  • Score a 1-inch (2.5 cm) border around the edge of the pastry with a knife. Be careful not to cut all the way through. Prick the center of the pastry with a fork to prevent it from puffing up during baking.
  • Spread the crumbled goat cheese evenly within the scored border. Arrange the sliced figs on top of the goat cheese.
  • Drizzle 2 tablespoons of honey over the figs and goat cheese, then sprinkle with fresh thyme leaves, sea salt, and black pepper.
  • Brush the beaten egg along the edges of the pastry to create a golden crust.
  • Bake in the preheated oven for about 20-25 minutes, or until the pastry is puffed and golden brown.
  • Remove from the oven and let it cool slightly. Drizzle with additional honey if desired before serving.

Notes

For a richer flavor, you can add a sprinkle of walnuts or almonds before baking.
If figs are not in season, dried figs can be used; just soak them in warm water for 10 minutes before slicing.
This tart can be served warm or at room temperature.
Pair with a light salad for a complete meal or serve as part of a mezze spread.
