- 6 ounces Ciabatta or sourdough bread cut into 1-inch cubes
- 1/4 cup Extra-virgin olive oil
- 1 1/2 pounds Ripe tomatoes cut into bite-sized pieces
- 1 medium Cucumber sliced into half-moons
- 1 small Red onion thinly sliced
- 1 cup Fresh basil leaves roughly torn
- 2 tablespoons Red wine vinegar
- 1 Garlic clove minced
- Sea salt to taste
- Freshly ground black pepper to taste
