- 4 large ripe peaches, halved and pitted (about 2 pounds / 900 grams)
- 2 tbsp honey (1.5 oz / 40 grams)
- 1 cup Greek yogurt (8.8 oz / 250 grams)
- 1 tbsp fresh mint leaves, finely chopped (0.1 oz / 3 grams)
- 1 tbsp olive oil (0.5 oz / 15 ml)
- Pinch of sea salt
- Optional: crushed almonds or hazelnuts for garnish
Preheat your grill to medium-high heat. Ensure the grill grates are clean to prevent sticking.
Brush the cut sides of the peaches lightly with olive oil. This will help prevent sticking and add a subtle flavor.
Place the peaches cut-side down onto the grill. Grill for about 2-3 minutes or until you see grill marks and the peaches begin to soften.
Flip the peaches over and drizzle with honey, then grill for another 2 minutes.
In the meantime, mix the Greek yogurt with chopped fresh mint and a pinch of sea salt in a small bowl.
Once the peaches are grilled, remove them from the grill and allow them to cool slightly.
To serve, place two peach halves on a plate, dollop with the mint-infused Greek yogurt, and garnish with additional mint leaves or crushed nuts if desired.
For a vegan option, use a plant-based yogurt and substitute honey with maple syrup.
If peaches are not in season, nectarines make a great substitute.
Ensure peaches are ripe for natural sweetness and the best grilling results.
