Ingredients
  

  • 1.5 pounds chicken breast or pork tenderloin cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 lemons juice of
  • 3 garlic cloves minced
  • 2 tablespoons fresh oregano chopped, or 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Wooden or metal skewers

Instructions
 

  • In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create the marinade.
  • Add the cubed meat to the bowl and toss to ensure each piece is well-coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  • If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.
  • Preheat the grill to medium-high heat.
  • Thread the marinated meat onto the skewers, leaving a small space between each piece to ensure even cooking.
  • Place the skewers on the grill and cook for 10 minutes, turning occasionally, until the meat is cooked through and has a nice char.
  • Remove the souvlaki from the grill and let it rest for a few minutes before serving.

Notes

For an authentic Greek experience, serve your souvlaki with tzatziki sauce, warm pita bread, and a fresh Greek salad. Marinating the meat for the full 2 hours will infuse it with maximum flavor.
