For the Grilled Chicken:
- 4 boneless, skinless chicken breasts about 6 ounces or 170 grams each

For the Homemade Croutons:

For the Caesar Dressing:
- 1/2 cup mayonnaise 120 ml
- 1 small garlic clove, minced
- 1 tbsp lemon juice 15 ml
- 1 tsp Dijon mustard 5 ml
- 2 anchovy fillets, minced
- 1/3 cup grated Parmesan cheese about 35 grams
- 2 tbsp water 30 ml
Additional Ingredients:
- 8 cups romaine lettuce, chopped about 200 grams
- 1/2 cup shaved Parmesan cheese about 50 grams
Preheat your grill to medium-high heat.
Brush chicken breasts with olive oil and season with salt, pepper, and garlic powder. Grill for 5-6 minutes on each side or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes, then slice into strips.
For the croutons, preheat the oven to 375°F (190°C). Toss the bread cubes with olive oil, garlic powder, and salt. Spread on a baking sheet and bake for 10-15 minutes, tossing occasionally, until golden and crisp.
