  • 4 fillets white fish (such as cod or sea bass) approximately 6 ounces (170g) each
  • 2 tbsp olive oil (30ml)
  • 1 tsp paprika (2g)
  • 1 tsp ground cumin (2g)
  • 1/2 tsp sea salt (2g)
  • 1/4 tsp black pepper (1g)
  • 1 lemon thinly sliced
  • Fresh parsley for garnish

For the Green Tahini Sauce:

  • 1/2 cup tahini (120g)
  • 1/2 cup fresh cilantro (15g)
  • 1/2 cup fresh parsley (15g)
  • 2 cloves garlic minced
  • 2 tbsp lemon juice (30ml)
  • 1/4 cup water (60ml)
  • Salt to taste

Instructions
 

  • Preheat the Oven: Begin by preheating your oven to 400°F (200°C).
  • Prepare the Fish: Lay the fish fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with paprika, cumin, salt, and pepper. Gently rub the spices onto both sides of the fillets.
  • Add Lemon Slices: Place thin slices of lemon on top of each fillet. This will infuse the fish with a zesty lemon flavor as it bakes.
  • Bake the Fish: Place the baking sheet in the oven and bake for about 15-20 minutes, or until the fish flakes easily with a fork.
  • Make the Green Tahini Sauce: While the fish is baking, combine tahini, cilantro, parsley, minced garlic, lemon juice, and water in a blender. Blend until smooth, adding more water if needed to reach a pourable consistency. Season with salt to taste.
  • Serve: Once the fish is baked, transfer the fillets to serving plates. Drizzle generously with the green tahini sauce and garnish with fresh parsley.
