- 8 slices thick brioche or challah bread
- 1 cup ricotta cheese 250g
- 1 cup mixed berries 150g, strawberries, blueberries, raspberries, more for garnish
- 2 large eggs
- 1/2 cup whole milk 120ml
- 1 teaspoon vanilla extract 5ml
- 2 tablespoons granulated sugar 25g
- 1/4 teaspoon ground cinnamon 1g
- 1 lemon zest zest of 1 lemon
- 1 tablespoon unsalted butter 15g, for cooking
- Honey or maple syrup for drizzling
- Powdered sugar for dusting (optional)
- Fresh mint leaves for garnish (optional)
Prepare the Berry Ricotta Filling: In a medium bowl, combine the ricotta cheese, lemon zest, and 1 tablespoon of sugar. Gently fold in the mixed berries, trying not to crush them. Set aside.
Whisk the Egg Mixture: In a shallow dish, whisk together the eggs, milk, vanilla extract, remaining sugar, and ground cinnamon until well combined.
Prep the Bread for Stuffing: Take a slice of bread and spread a generous amount of the ricotta and berry mixture on one side. Top with another slice of bread to create a sandwich. Repeat with the remaining slices to make four stuffed French toasts.
Soak the French Toast: Dip each stuffed bread sandwich into the egg mixture, allowing it to soak for a few seconds on each side.
