  • 4 large eggs, for poaching
  • 1 tbsp white vinegar

Instructions
 

  • Begin by heating the olive oil in a medium saucepan over medium heat. Add the chopped spinach and sauté until wilted, about 3-4 minutes. Season with salt, pepper, and garlic powder.
  • Stir in the rolled oats and toast lightly with the spinach for 1-2 minutes.
  • Pour in the water or vegetable broth. Increase the heat to bring the mixture to a boil, then reduce heat to a simmer. Cook the oatmeal for about 5-7 minutes, or until the oats are tender and have absorbed most of the liquid.
  • While the oatmeal is cooking, bring a small pot of water to a gentle boil and add the white vinegar. Crack an egg into a small bowl. Using a spoon, create a whirlpool in the boiling water and gently slide the egg into the center. Poach the egg for 3-4 minutes or until the whites are set but the yolk remains runny. Use a slotted spoon to remove the egg and place it on a paper towel to drain. Repeat the process with the remaining eggs.
  • Divide the cooked oatmeal into bowls. Top each bowl with a poached egg, and if desired, add crumbled feta cheese, chopped tomatoes, and fresh herbs.

Notes

For a vegan version, omit the eggs and top with a dollop of hummus or avocado slices. Adjust the seasonings as desired, and consider adding a pinch of smoked paprika for a subtle depth of flavor.
