Measuring spoons
- 1 lb carrots peeled and cut into 2-inch pieces
- 2 tbsp olive oil
- 1 tbsp harissa paste
- 1 tsp honey
- 1/2 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- Fresh parsley chopped for garnish
Preheat your oven to 400°F (200°C).
In a large bowl, combine olive oil, harissa paste, honey, ground cumin, salt, and black pepper. Whisk these ingredients together until well-blended.
Add the carrots to the bowl and toss until they are evenly coated with the harissa mixture.
Spread the carrots on a baking sheet in a single layer, ensuring they are not overcrowded.
Roast in the preheated oven for 25 minutes, or until the carrots are tender and have a nice caramelization on the edges. Halfway through, stir the carrots to ensure even roasting.
Once done, remove from the oven and let them cool for a few minutes.
Transfer the roasted carrots to a serving dish and garnish with fresh parsley.
Serve warm as a vibrant, flavor-packed side to your favorite Mediterranean dishes.
For a vegan version, substitute honey with maple syrup or agave nectar.
Adjust the amount of harissa paste to suit your preferred level of heat.
These carrots can be prepared ahead of time and reheated, making them perfect for meal prep or entertaining.
