- 1/4 cup extra virgin olive oil
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 medium tomatoes, diced (or 1 cup canned diced tomatoes)
- 1 tbsp tomato paste
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup water
- 2 tbsp lemon juice
- 1/4 cup chopped fresh parsley for garnish
Begin by heating the olive oil in a large pan over medium heat. Add the sliced onions and sauté until they become translucent and soft, about 5 minutes.
Introduce the minced garlic to the pan and continue to sauté for another 2 minutes, ensuring the aroma is released but not allowing the garlic to brown.
